To gauge the speed and movement of the animal, you need a fast shutter speed, 1/250th to 1/1000th second for birds. With aperture, you want background blurring, at least f 5.6 with a telephoto lens. Distance between subject and background causes blurring. As for ISO, your setting can be as high as 1600 with little image noise. Set your camera to continuous autofocus and high frame rate to lock on and track the moving animal.
